In a large mixing bowl, beat the softened cream cheese and butter together using an electric mixer until smooth and creamy. This forms the rich, velvety base of your frosting.
Gradually add powdered sugar, one cup at a time, beating continuously until light and fluffy.
Mix in the vanilla extract and 2–3 tablespoons of reserved pineapple juice. The juice enhances the tropical flavor and creates a silky, spreadable consistency. Adjust with an extra tablespoon if needed.
3️⃣ Assemble the Cake
Place one cake layer on a serving plate or cake stand. Spread a generous amount of frosting evenly over the top using an offset spatula.
Optional: Add a layer of pineapple tidbits and a sprinkling of chopped pecans for extra texture and fruitiness.
Gently place the second cake layer on top. Apply a thin “crumb coat” of frosting to seal in any loose crumbs, then chill the cake for 10–15 minutes before finishing with the remaining frosting for a smooth, polished look.
Decorate the top with chopped pecans and shredded coconut. For extra flair, scatter pineapple tidbits or add a few whole pecans as a final touch.
