Step 1: Prepare the Rice
- Cook the Rice Ahead: For the best fried rice texture, cook your white rice a day or two in advance. Let it cool completely, then store it in the refrigerator. Chilled rice fries up beautifully and won’t become mushy.
- Sauté the Aromatics: Heat a large skillet or wok over medium-high heat. Add a little oil or butter, then sauté the chopped onion and minced garlic until fragrant and lightly golden.
- Scramble the Eggs: Push the onions and garlic to one side of the pan. Crack in the eggs and scramble them until just cooked, then mix them together with the aromatics.
- Add the Rice: Add the cold rice to the skillet, breaking up any clumps with a spatula. Pour in teriyaki sauce and soy sauce to taste, stirring well to coat the rice evenly.
- Cook to Perfection: Continue to cook for 5–7 minutes, stirring occasionally until the rice is heated through, slightly crisped, and full of flavor. Remove from heat and set aside.
