Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and lightly flour a 9×13-inch baking pan or three 8-inch round cake pans.
- Make the Cake Batter: In a large mixing bowl, combine the yellow cake mix, eggs, vegetable oil, and the entire can of mandarin oranges with their juice. Mix on medium speed for about 2–3 minutes, or until the batter is smooth and well blended. The oranges will break up slightly, infusing the cake with their flavor and keeping it moist.
- Bake: Pour the batter evenly into your prepared pan(s). Bake for 20–25 minutes, or until a toothpick inserted in the center comes out clean and the top is lightly golden. Be careful not to overbake — this cake stays deliciously soft when moist.
- Cool Completely: Remove the cake from the oven and allow it to cool completely in the pan on a wire rack. The frosting will only spread well on a fully cooled cake.
