đŸ„” Step 1: Prepare the potatoes
Preheat your oven to 200°C (fan).
Grate the potatoes with a grater with large holes, then squeeze them out well in a clean kitchen towel to remove excess water.
In a bowl, mix the grated potatoes with the olive oil, salt and pepper.

🧁 Step 2: Shape the nests
Lightly butter a muffin tin.
Divide the shredded potatoes into the indentations of the pan, pressing well to form a hollow in the center (like a nest).
Bake for 15 to 20 minutes, until the edges begin to brown.

🍳 Step 3: Garnish and bake
Remove the pan from the oven. Spread the grated cheese and diced ham at the bottom of each nest.
Crack an egg into each hollow.
Return to the oven for about 10 to 12 minutes, until the white is cooked but the yolk is still runny (or more if you prefer a firmer egg).
