Rustic Golden Potato Bake

Instructions

  1. Prepare the vegetables:
    Grate the potatoes and carrot, and finely chop the onion, bell pepper, and chives. Place all the vegetables in a large mixing bowl.
  2. Mix the batter:
    In a separate bowl, whisk together the eggs, milk, salt, and baking powder. Gradually add the flour, whisking until smooth and lump-free.
  3. Combine everything:
    Pour the egg mixture into the bowl of grated vegetables. Add the grated cheese and chives, stirring until everything is evenly mixed and coated. The mixture should be thick but pourable.
  4. Bake:
    Preheat the oven to 180°C (350°F). Lightly grease or line a baking dish with parchment paper. Pour the mixture into the prepared dish, spreading it evenly with a spatula.
