1. Marinate the Beef:
In a medium bowl, combine the sliced steak with soy sauce, cornstarch, and sesame oil. Toss to coat evenly, then let it marinate for 10–15 minutes while you prepare the other ingredients. This quick marinade tenderizes the beef and helps it develop a flavorful sear later on.
2. Make the Sauce:
In a separate bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, brown sugar (or honey), cornstarch, and water (or beef broth) until smooth. Set aside. This sauce will create that signature glossy coating that clings to every bite of beef and veggies.
3. Stir-Fry the Vegetables:
Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat. Add the broccoli florets and red bell pepper slices. Stir-fry for 3–4 minutes until the vegetables are tender-crisp and slightly charred. Remove from the pan and set aside.
4. Sear the Beef:
Add the remaining tablespoon of oil to the same pan. Once hot, add the marinated beef in a single layer. Let it sear without moving for about 2 minutes per side to develop a rich caramelized crust. Cook in batches if needed to avoid overcrowding the pan. Add the minced garlic and ginger during the last 30 seconds of cooking, stirring just until fragrant.
