Step 4 – Crisp and Glaze the Ribs
- Once the ribs are tender, increase oven temperature to 200°C (400°F).
- Brush the ribs generously with the glaze and return to the oven for 15–20 minutes, brushing with more glaze every 5–7 minutes.
- When finished, the ribs should be sticky, caramelized, and glossy.
Step 5 – Cook the Potatoes
Option 1 – Roast: Toss the potato slices in olive oil, paprika, salt, and pepper. Spread on a baking sheet and roast alongside the ribs for 20–30 minutes, flipping halfway through until golden and crisp.
Option 2 – Pan-Fry: Heat olive oil in a large skillet over medium-high heat. Add the potatoes in a single layer and cook 5–7 minutes per side until golden and tender.
Step 6 – Serve
- Cut the glazed ribs into individual portions.
- Serve with crispy potatoes on the side, and garnish with sliced red chilies and chopped green onions for a fresh, spicy finish.
