Sticky Glazed Ribs with Crispy Potatoes

Step 4 – Crisp and Glaze the Ribs

  1. Once the ribs are tender, increase oven temperature to 200°C (400°F).
  2. Brush the ribs generously with the glaze and return to the oven for 15–20 minutes, brushing with more glaze every 5–7 minutes.
  3. When finished, the ribs should be sticky, caramelized, and glossy.

Step 5 – Cook the Potatoes

Option 1 – Roast: Toss the potato slices in olive oil, paprika, salt, and pepper. Spread on a baking sheet and roast alongside the ribs for 20–30 minutes, flipping halfway through until golden and crisp.

Option 2 – Pan-Fry: Heat olive oil in a large skillet over medium-high heat. Add the potatoes in a single layer and cook 5–7 minutes per side until golden and tender.

Step 6 – Serve

  1. Cut the glazed ribs into individual portions.
  2. Serve with crispy potatoes on the side, and garnish with sliced red chilies and chopped green onions for a fresh, spicy finish.
