1. Prepare the Seafood
- Pat the scallops and lobster tails dry with paper towels — this ensures a perfect sear.
- Season lightly with salt and black pepper on both sides.
2. Sear the Scallops
- Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
- When the pan is hot and butter starts to sizzle, add scallops and sear for 2–3 minutes per side until golden brown and caramelized. Remove from pan and set aside.
