White Chocolate Blueberry Cupcakes

3️⃣ Blueberry Buttercream Frosting

Ingredients:

  • ½ cup (115 g) unsalted butter, room temperature
  • 2 ½ cups (300 g) powdered sugar
  • ¼ cup blueberry puree (see below)
  • 1 tsp lemon juice
  • Pinch of salt

To make blueberry puree:

  1. In a small saucepan, cook ¾ cup blueberries over medium heat for about 5 minutes until soft and juicy.
  2. Mash and strain through a fine mesh sieve to remove skins.
  3. Allow the puree to cool completely before using.

Instructions:

  1. Beat butter until smooth and creamy.
  2. Gradually add powdered sugar, mixing until fluffy.
  3. Beat in the cooled blueberry puree, lemon juice, and a pinch of salt until fully combined and smooth.
  4. If the frosting is too thin, add more powdered sugar; if too thick, add a teaspoon of puree or milk.
